Shortbread dough:
150g flour
50g sugar
75g butter
1 egg
0.25 tsp baking powder
0.25 tsp salt
Curd filling:
500g fat cottage cheese
4 large eggs + 1 yolk for brushing
100g glass of sugar
1 tsp starch
200g sour cream
100g raisins (soaked in cognac/apple or grape juice)
0.5 vanilla pod
lemon zest - to taste
a pinch of salt
Glaze:
0.5 tbsp. powdered sugar
1 tbsp. lemon juice
Square frame = 20x20cm

Dough: Grind flour and butter into wet crumbs. Add the remaining ingredients and knead into an elastic dough. Divide the dough into 2 parts: one part of the dough is equal to 2/3 of the total volume of the dough, the second part is equal to 1/3. Place in the refrigerator for 15 minutes. Take out 2/3 of the dough and roll it into a layer 0.3 cm thick. Roll out the second piece of dough the same way. Place in the refrigerator. Preheat the oven to 200C. Transfer the rolled out dough (most of it) onto a baking sheet lined with parchment and place in the preheated oven. Bake for 10 minutes until golden brown. The second part of the dough remains in the refrigerator for now.
Filling: Separate the whites from the yolks. Combine all ingredients except yolks and whites and mix until smooth. Next, add the yolks one at a time, mixing well. Beat the whites with a pinch of salt until soft peaks form. Add the whites into the curd mixture in several additions.
Assembly and final preparation: Reduce oven temperature to 170C. Cut the baked base to fit the frame. Place the frame and pour the curd mixture over the sand base. Cut the second part of the dough into thin strips 1 cm wide. Place the strips in the form of a grid on top of the curd mass. Grease with yolk. Bake at 170C for 1 hour. Let cool in the oven with the door ajar. Place in the refrigerator for several hours (or overnight). The cheesecake rises during baking, but settles after cooling. At the same time maintaining the porous structure of the filling. After a night in the refrigerator, the taste of the cheesecake is fully revealed.

Milk - 150-200 ml
Lemon juice - 2 tsp.

Preparation:
In general, this cheese is made from cream, but since I didn’t have cream, I thought, why not try making it from sour cream? After all, sour cream is made from cream! I cooked it, tried it and was simply stunned, it turned out delicious!

1. Pour milk into sour cream, mix well, put on fire and heat to about 70-75C, stirring.
2. Add lemon juice, stir, cook over low heat for a few more minutes, sour cream should curdle (do not boil).
3. Turn off the heat. Let it sit on the stove for a while, 5-7 minutes.
4. Place gauze, folded two or three times, or a thin cloth into a colander, pour out the curdled liquid, and let it drain.
5. To quickly drain, lift one edge of the gauze, then the other; you can move the mass slightly with a spoon. When the liquid has drained, after about 40-50 minutes, squeeze the mass a little.
6. If during this time the liquid has not yet drained, then leave the mixture for some more time. Yes, the more you squeeze the cheese, the denser it will be.

Preparation:
Beat eggs with sugar (I beat for 5 minutes). Add sour cream, soda, flour and melted butter. Knead a homogeneous dough, quite liquid.

Filling:
Beat all ingredients with a mixer.

Grease the mold with oil and sprinkle with flour. Pour the dough, place the curd filling in the middle of the dough. The curd filling can be sprinkled with berries (I put some strawberries and later regretted that it was so little, I should have put 200 grams) and put in a NOT preheated oven for 30-35 minutes at 180*C.
Cool the finished pie slightly in the pan. When baking, the “heavy” curd filling sinks down, and the sponge cake rises, forming sides. Bon appetit!

Cottage cheese at home.

Ingredients:
5 liters of whole milk
500 grams of sour cream (you can also use kefir)

1. First you need to mix milk and sour cream, gradually adding milk to sour cream. First add a small amount and mix well until smooth. Then gradually add the rest of the milk and mix as well. This must be done to avoid the formation of lumps of sour cream in the mixture.
2. Now put the mixture in a warm place. This is ideal next to the stove or stove. Leave it for 2-3 days until the mixture begins to curdle. It will begin to resemble jelly, which easily separates from the surface.
3. Once the mixture reaches the desired consistency, place the pan in the oven at 120 degrees for an hour. Then remove and let the mixture cool overnight.
4. Now you will have to separate the curds from the whey. For this you will need a large piece of gauze. Take another large pan or bowl, line it with gauze and pour the mixture from the pan into the gauze. Carefully lift it by the edges, tie the fabric and hang it over the whey.
5. Let the curd sit for a day or overnight. If you want to make a kind of cheese out of it, then press the cheesecloth between two cutting boards and leave for another day.
This completes the preparation of cottage cheese at home. Store it in the refrigerator for about a week. Bon appetit!

Two-story cottage cheese casserole.

For the first layer:
750 g cottage cheese 5% fat
2 large eggs
2 tbsp. decoys*
2 - 3 tbsp. dried cranberries without sugar (or raisins, cherries)
2 - 3 tbsp. white sugar (or more if you like it sweet. Taste before stirring in the eggs).
1 tsp vanilla extract
zest of 1 lemon (optional)

*Instead of semolina, you can use an additional egg.

For the second layer:
300 g sour cream 9% fat
1 egg
1 tbsp. sugar (or 2 tbsp condensed milk).

Preheat the oven to 160-170 C.
1. Mix all the products for the first layer, place in a mold (I don’t lubricate or cover the mold with anything), level it. Bake for 25-30 minutes until the perimeter of the casserole is firm but the center is still soft.
2. Mix all the products for the second layer, pour into the mold. Move the mold along the table until the filling layer becomes even. Bake for another 10 minutes until the filling thickens.
3. Remove the casserole from the oven and use a sharp knife to run along the sides of the pan, separating the casserole from them.
The casserole can be eaten either hot (10-15 minutes after baking) or cold.

My comments: I used about 0.5 cups of sugar in the cottage cheese
I made it with raspberries in small molds.

Delicious cottage cheese casserole.

You will need:
-500 g cottage cheese
-3 eggs (separate yolks and whites)
-5 tbsp. l. semolina
-3 tbsp. l. Sahara
-1 tsp. vanilla essence
-1 tbsp. l. baking powder
-raisins or dried cranberries - to taste

Preparation:
Mix all the products from the list, except egg whites, thoroughly. In a separate bowl with a pinch of salt, beat the whites until soft peaks form. Preheat the oven to 180 degrees C.
Carefully mix the whites into the curd mass and pour the finished mass into a mold greased with butter.
Place in the oven and bake for about 45 minutes until golden brown.
Serve the casserole warm with sour cream or jam.

Cottage cheese casserole.

Ingredients:
- 2 eggs
- a mug of milk
- marshmallow
- 500 g of cottage cheese
- ripe pear
- 1 tsp. powdered sugar
- oil
- sugar (optional)

Preparation:
First you need to separate the yolks from the whites and mix them thoroughly with milk. Then you need to add half a kilo of cottage cheese and beat the resulting mixture thoroughly.
After this, you need to cut the pear with marshmallows into small pieces and add them to the already whipped curd mixture.
Next, generously grease the mold with oil and place the resulting mass there. We return to the whites, which need to be beaten together with powdered sugar and poured onto the casserole, leveled. You can also add sugar to taste.
And finally, put the resulting dish in the oven for 50 minutes at approximately 150C.

Primorye cottage cheesecakes.

Ingredients:
500 g cottage cheese
4 eggs
4 tbsp. heaps of flour
1 tsp soda (do not extinguish)

Preparation:
Turned on the oven at 220C.
I put eggs in the cottage cheese. Beat with a mixer. Added soda and flour.
Mixed it up. The dough turns out thick.
I greased the molds, put circles of paper on the bottom, and greased them too (in the original recipe, the dough is placed on a hot baking sheet, sprinkled with vegetable oil). I laid out the dough.
Bake in a preheated oven until golden brown.
They deflated a little, it's okay, it doesn't affect the taste.
Coat hot curds generously with sour cream, place in a saucepan and cover with a lid. Let stand for a while to soak.

Cottage cheese casserole “For adults”

Cottage cheese - 400 g
Dried apricots (a little less than a glass, but you can taste it) - 0.75 cup.
Coconut flakes - 30 g
Semolina - 2 tbsp. l.
Starch - 1 tbsp. l.
White semi-sweet wine - 100 ml
Milk - 150 ml
Lemon zest - 1 pc.
Almond crumbs - 1 tbsp. l.
Honey - 2 tbsp. l.
Sugar - 4 tbsp. l.
Egg - 2 pcs

Rinse the dried apricots, add hot water for 5-10 minutes (depending on the freshness of the dried apricots), drain the water, add honey, wine, juice and lemon zest, bring to a boil and simmer over low heat for 5-7 minutes. Let it cool along with the liquid, then drain the liquid, but DO NOT POOUR it, it will come in handy. Cut the dried apricots. Grind the cottage cheese thoroughly with milk in a blender so that there are fewer grains, or better yet, first roll the cottage cheese through a meat grinder or through a sieve. Add liquid from dried apricots to the resulting curd paste and mix. Beat eggs with sugar until fluffy, mix with curd mass. Add semolina, starch, almond crumbs, coconut flakes, mix.
Line the mold with parchment paper, grease with oil and place dried apricots on the bottom, pour the curd mass onto it. Bake in a preheated oven for 20-25 minutes at 180 degrees, then reduce the temperature to 150 and bake for another 15-20 minutes.
The center should harden, touch it, if it’s elastic, it’s ready. Let the finished casserole stand in the pan for 10-15 minutes. Then turn it over onto a plate and sprinkle coconut flakes on top.

Curd dessert "Old Riga"

400 grams of cottage cheese (any fat content, does not affect the taste)
200 g sour cream (any fat content)
20 g gelatin
can of diced pineapples
0.5 liters of pineapple juice
vanillin
0.5-3/4 cans of condensed milk (adjust sweetness to your taste)

Dissolve gelatin in pineapple juice for about 40-1 hours (add liquid from pineapple cubes to it). Beat cottage cheese with sour cream, vinylin and condensed milk (you can use a blender). Dissolve the swollen gelatin over low heat (do not bring to a boil!), mix with the sour cream and curd mixture and add pineapple cubes (it is advisable to always have pineapple, it has a brighter taste). Pour the dessert into molds and put it in the refrigerator - after a few hours you can taste it, it’s incredibly tasty and tender!

Curd pudding.

Ingredients:
500 g cottage cheese
150 g semolina (6-7 heaped tablespoons)
350 ml. milk
4 eggs
150 g sugar
vanillin

Optional:
zest of 1 lemon
50 g raisins

Preparation:
Pour semolina into cold milk
Stir
Cook until thick (5 minutes or less)
Cool (after cooling, the mass has thickened greatly, as it should be)
Beat the yolks with 100 g of sugar and pour into the cottage cheese, add vanillin
Beat with a mixer
Add the cooled semolina mixture and beat again with a mixer.
Separately, beat the whites with the remaining 50 g of sugar and add to the dough
Mix
Place in a greased plant. oil mold
Bake in an oven preheated to 180 C until browned.
Once the pudding has cooled, you can eat it. Very tasty with sour cream.

Mini-tarts with curd filling.

Delicate crumbly dough and juicy curd filling with lemon zest and raisins. I serve them sprinkled with cinnamon and garnished with fresh mint leaves. If you don’t have molds of similar sizes, you can make portioned baskets or one large tart. In this case, the dough remains unchanged, but the filling for the baskets will need less, about 250-300 g of cottage cheese; for a large tart, on the contrary, more - 600 grams.

100 g butter,
1 egg,
400 g. cottage cheese,
80 g sugar,
60-70 g raisins (or 3-4 dried figs),
zest of 1/4 lemon,
175 g wheat flour.

First remove the butter from the refrigerator.
Preheat the oven to 200 degrees.
Separate the white from the yolk.
Beat the butter with 30 g of sugar with a mixer, add the yolk and beat again.
Add flour and grind until you get a crumbly dough.
Divide the dough into three parts and distribute among the molds.
Mix cottage cheese, egg white, remaining sugar, zest and raisins (chopped figs).
Divide the filling into the baskets and bake for 15-20 minutes. Let cool slightly. Bon appetit! :)

Cottage cheese casserole with white chocolate.

Ingredients:
2 eggs
75 gr. Sahara
160 gr. cottage cheese
100 gr. sour cream
40 gr. starch
100 gr. white chocolate

Preparation:
Beat eggs with sugar with a mixer thoroughly until foamy, in a separate bowl mix cottage cheese with sour cream and add starch, pour half of the egg mixture into this mixture and mix very carefully.
Melt the chocolate in a water bath, mix it with the remaining egg mixture and combine everything into one whole, i.e. cottage cheese plus chocolate.
Grease the pan with butter, sprinkle with flour, pour out the dough and bake at 180 degrees for 40 minutes, the casserole should be browned.
Let cool and then cut.

Ingredients:
3 eggs
500 gr. cottage cheese
250 gr. sour cream
1 tbsp. Sahara
2 tbsp. starch
vanillin
zest from 1 orange

Preparation:
Everything is extremely simple, turn on the oven and heat it to 180 degrees, put all the ingredients according to the list in a container, turn on the mixer and just mix everything for 3-4 minutes. Next, take a mold with a small diameter of 20-22 cm, grease it with butter or simply cover it with baking paper, pour the resulting mixture and bake for 40-50 minutes, if the middle looks a little rattly, don’t worry, when the curd has cooled everything will set perfectly.
Be sure to cool, since the same delicious taste of this product is impossible when hot. Orange zest can be replaced with dried fruits, fresh fruits, nuts, blah, blah, blah...
And this whole thing can be baked on a dough base, well, like in cheesecakes, chop up cookies with butter, lay out the bottom, pour the cheese beauty on top, and bake. Delicious!

Lviv cheesecake.

It's hard to imagine a Lviv coffee shop without this delicacy. Lviv is truly proud of its cheesecake. Not cottage cheese pie, not cottage cheese or cheesecake, no. It is syrnnik, from the Ukrainian word “sir” (in transcription “cheese”) - cottage cheese. Of course, local residents proudly say that the authentic recipe is many centuries old, but at the same time no one knows which of the existing variations of cheesecake is the original. There are a lot of variations of Lviv cheesecake - it is prepared with lemon or orange zest, coke shavings, nuts, poppy seeds and even apples. Glaze:
50 g butter
2 tbsp. l. Sahara
5 tbsp. l. heavy cream (or sour cream)
3 tbsp. l. cocoa without sugar

Preparation:
Preheat the oven to 180C.
Rub the cottage cheese through a sieve. Add butter to the grated cottage cheese and mash well until smooth. Grind the yolks with sugar until smooth. There is no need to beat vigorously. Add the yolks to the curd mass, and stir in the semolina. Beat everything well with a mixer. Grate the lemon zest on a fine grater and add to the curd mixture. Add raisins to taste. Stir everything until smooth.
Thoroughly beat the whites with a pinch of salt until stiff peaks form. Using gentle movements, from top to bottom, fold the whipped whites into the curd mass. Grease the mold well with butter (I have a mold measuring 24x10 cm). Transfer the mixture and smooth it up. Place in an oven preheated to 180 degrees. Bake for 50-60 minutes. The top should brown - if this happens ahead of time, cover the cheesecake with foil or parchment paper.

Glaze:


Serve with freshly brewed coffee straight from the refrigerator in the morning.

Lviv cheesecake with cranberries and chocolate streusel.

Traditional Lviv cheesecake, in fact, is a cottage cheese casserole. But it is so tasty that you can’t call it “just a casserole.”

To prepare you will need:
cottage cheese (used 0%) - 500 g;
sugar - 2/3 cup;
eggs - 3 pcs.;
lemon zest - 1 pc.;
starch - 1 tbsp. l.;
dried cranberries.

For the streusel:
butter - 80 g;
sugar - 1/3 cup;
flour - 2/3 cup;
cocoa - 2 tbsp. l.

Grind cottage cheese, sugar, eggs into a homogeneous, fluffy, creamy mass.
Add starch, lemon zest, mix thoroughly.
Wash the cranberries with hot water, dry, add to the curd mass, mix.
Prepare the streusel: grate the butter.
Add flour and sugar to the grated butter and rub into crumbs with your hands.
Add cocoa, grind until smooth.
Place half of the chocolate streusel on the bottom of the baking dish, then the curd mass, carefully level with a spatula so that there are no voids.
Cover with the other half of the streusel.
Bake for 45 minutes at 190 degrees. The finished Lviv cheesecake rises above the mold and lags behind the walls. It must be completely cooled without removing it from the mold.
The cheesecake needs to sit for 5-6 hours, it becomes dense.

1 kg cottage cheese, medium fat (without liquid)
400 g sugar
9 eggs, separated
200 g butter, softened
2 tbsp. l. semolina
zest of one lemon
1 vanilla bean or vanilla sugar
raisins, nuts to taste

Glaze:
50 g butter
2 tbsp. l. Sahara
5 tbsp. l. heavy cream (or sour cream)
3 tbsp. l. cocoa without sugar

Preparation:
Preheat the oven to 180C.
Rub the cottage cheese through a sieve.
Add butter to the pureed cottage cheese and mash well until smooth.
Grind the yolks with sugar until smooth. There is no need to beat vigorously.
Add the yolks to the curd mass, and stir in the semolina. Beat everything well with a mixer.
Grate the lemon zest on a fine grater and add it to the curd mixture along with the vanilla seeds.
Add raisins and nuts to taste.
Mix everything until smooth.
Beat the egg whites thoroughly with a pinch of salt until they form stiff peaks.
Using gentle movements, from top to bottom, fold the whipped whites into the curd mass.
Place in the mold. It should not be large or small - the dough will not rise during the baking process, it will simply bake and should be completely baked. From this amount of ingredients you will get 2 cheesecakes for molds measuring 24x10 cm.
Bake in preheated oven for 60 minutes. The top should brown - if this happens ahead of time, cover the cheesecake with foil or parchment paper.
Let the dessert cool completely in the mold and only then turn it over onto a plate, otherwise it will fall apart.

Glaze:
Combine all ingredients in a small saucepan and cook until combined and smooth.
Cover the cheesecake with chocolate glaze and put it in the refrigerator overnight. This is a prerequisite - fresh cheesecake may seem dry.
Serve with freshly brewed coffee or cocoa straight from the refrigerator in the morning. Enjoy your tea!
