Viennese waffles are especially popular among those with a sweet tooth. Try cooking them with melon pulp and honey, and you will get a true confectionery masterpiece. Choose only high-quality and fresh products.

  • honey (liquid structure) – 70 ml;
  • soda - half a teaspoon;
  • melon pulp – 60 g;
  • soft butter – 50 g.

Preparation:

  1. Pour milk into a bowl.
  2. Add eggs and honey to the milk. Honey needs to be liquid so that it can be more easily dissolved in milk.
  3. Let's work a little with a whisk.
  4. Now let's add vanilla. We determine its quantity based on our own taste preferences.
  5. Quench the soda with vinegar and add it to the rest of the ingredients.

  7. Free the melon from the peel.
  8. Cut the pulp into small cubes.
  9. Add butter and melon pieces to the milk base. Let's stir well.
  10. Sift the flour. It is imperative to do this, then the waffles will be soft and tender.
  11. Pour flour into the base in small portions. At the same time, work with a whisk and knead the base. Do not rush to pour out the entire glass of flour. You may need a little less. The base should have a structure similar to sour cream.
  12. Knead the waffle base thoroughly until we achieve a homogeneous structure and break up all the lumps.
  13. Take a silicone mold. There is no need to lubricate it with oil. Instead, pour a few drops of purified water into the mold.
  14. Fill out the form with the dough.
  15. Bake waffles at one hundred and eighty degrees for thirty minutes.
  16. Remove the waffles from the mold. It won't be difficult to do this. If the dough sticks together, cut the waffles into two equal parts.

Any housewife should know how to make soft Viennese waffles at home. This mouth-watering delicacy is loved by adults and children because it is tasty and aromatic due to the use of high-quality ingredients. To make it, you need to learn how to prepare the dough and how to properly place it in an electric waffle iron.

How to make Viennese waffles

Like other dishes, the preparation of Viennese waffles begins with the selection of a recipe and ingredients. Belgian products are distinguished by their splendor and softness, delicate taste and volume. It’s easy to bake them at home if you know the secrets of making the dough. The resulting preparations can be fastened together with sweet fillings or served with salty cheese and smoked meats, so the dish can easily be both a dessert and a snack.

The composition uses flour, milk, eggs and sugar. A dough mass is mixed from them and baked using a waffle iron or sandwich maker. When filling the devices, you should make sure that the dough covers the cells completely, but does not spill out. After compacting it, you need to close the lid of the device and fry the crust for 4 minutes. For Soviet appliances, it takes a little more time - the products should be fried until they turn light beige so that they begin to crisp.

Dough

When preparing a Belgian snack, it is important to properly knead the dough for soft waffles. For it, take products at room temperature - butter or softened margarine, warmed eggs and base. The latter can be different - milk, kefir, cream and even yogurt without additives. The flour for the dough is wheat flour, preferably finely ground and of the highest grade. If you take old flour, you will end up with heavy, damp products, and if you use dry flour, you will end up with crumbly and tasteless products.

The dough recipe requires sifting the flour, which will give the products elasticity and oxygen saturation. For the recipe, you need to take only the freshest oil - if it was made more than 10 days ago, it is better to take another one. Instead of butter, you can use vegetable or cooking margarine. Use whole milk with a fat content of up to 2% to get a caramel taste, or baked milk. Sugar is taken in the form of sand or powder, and instead of chicken eggs it is good to take quail eggs.

The required components will require baking powder or baking soda, and oil for coating the mold. If you bake the product in the oven, you can use silicone molds, which do not require lubrication. To knead a simple dough, you need to mix all the dry ingredients and pour out the liquid ones. For airiness, beat the whites separately from the yolk parts and add them at the end.

Ingredients

130 g wheat flour;

30 g fine sugar;

salt;

3 g baking powder;

30 ml vegetable oil;

two chicken eggs;

30 g drained butter;

170 ml kefir.

40 g chocolate;

100 ml heavy cream;

hazelnuts and almonds;

pomegranate seeds.

Cooking method

1. Place all ingredients for the dough, except vegetable oil, in a deep container and mix with a mixer. The dough should be the consistency of liquid sour cream.

2. Pour the dough into silicone molds. Place them in the oven for ten minutes. Then we take out the mold and turn it over onto a baking sheet so that the beautiful ribbed side is on top. Place in the oven again for about five minutes until the waffles brown.

3. Peel the thin skins from the nuts and pour them into a blender container and grind them into coarse crumbs.

4. Place the finished waffles on the plates in which we will serve.

5. Break the chocolate into pieces and place in a saucepan. Pour in cream and place on low heat. Simmer, stirring constantly, until you get a homogeneous chocolate mixture.

6. Pour hot chocolate over the waffles, sprinkle with nuts and pomegranate seeds.

Recipe 7. Ginger-honey waffles without a waffle iron

Ingredients

cognac – 30 ml;

fine sugar – 110 g;

ground dry ginger – 4 g;

wheat flour – 125 g;

liquid honey – 125 g.

Cooking method

1. Cut the butter into pieces and place in a small bowl. Place it over a saucepan of boiling water and melt, stirring. Add honey and sugar to the melted butter and keep in a water bath until completely dissolved. Remove the bowl from the heat and cool the contents.

2. Little by little add flour and dry ginger, add cognac and knead the dough. Preheat the oven to 180 C. Place thin cakes of dough on a baking sheet lined with parchment paper. Place in the oven for five minutes.

3. As soon as the surface of the waffle is browned, remove the waffles from the oven, cool for a minute and roll into a tube. This must be done while the waffles are still quite hot, otherwise the cooled waffles will break.

4. Fill the finished waffles with any cream or other filling.

Waffles turn out fluffy if you beat the whites separately from the yolks, and only then add them to the dough.

Instead of milk for the dough, you can use whey or kefir.

Silicone waffle molds do not need to be greased.

You can decorate the waffles with powdered sugar, melted chocolate or fresh berries.

It is better to knead the waffle dough using a mixer so that not a single lump remains in it.
