        The dough is almost ready, all that remains is to add vanillin to it - an optional ingredient, but incredibly aromatic, so we add it very little. Next, sift the flour into the dough and knead it until smooth.

        The dough turns out runny, about the same as medium-fat sour cream. There is no need to make it thicker, otherwise the waffles will no longer be so thin and crispy.

        That's it, the dough is ready, it's time to turn on the waffle iron. I let it warm up for 5-7 minutes, then place a tablespoon of dough in the middle of the bottom plate. No more is needed, otherwise the dough may try to escape outside. There is also no need to additionally lubricate the plates with any fats - there is already enough oil in the dough, nothing will stick.

        As soon as you have laid out the dough, cover the lid and press it tightly with your fingers. Be careful! At this moment, a characteristic hiss will be heard from the waffle iron and hot steam will pour out of all the cracks, so we keep our hands as far from the waffle iron as possible, taking into account the fact that the lid still needs to be pressed at least a second nd 10.

        Waffles bake quite quickly, so after 1-1.5 minutes. You can already check the degree of roasting. You shouldn't fry the waffles too much; you simply won't be able to roll them. They are slightly browned and can be taken out.

        Now, very, very quickly, while it’s still hot, roll up the waffle and put it on a plate.

        You can roll the waffles using a regular tube or a cone. The second option is preferable if you are going to fill the waffles with filling.

        The mass will be thick and viscous. Pour the whey into the main mixture and mix well with a whisk.

        The dough will be homogeneous, shiny and not thick.

        Preheat the electric waffle iron well. Grease the baking surface with vegetable oil. Place 1.5 tablespoons of dough and bake waffles until golden brown.

        Remove the hot waffles from the electric waffle iron and immediately roll them into a tube. To prevent the waffles from unwinding, you can press them with a fork for half a minute.

        Recipe 7: waffle rolls with kefir (step by step with photo)

      • kefir - 400 ml,
      • chicken eggs - 3 pcs.,
      • granulated sugar - 100 grams,
      • vegetable oil - 3 tbsp. spoons,
      • flour - 1 cup,
      • salt - 2 pinches,
      • vanillin - to taste.
      • Break eggs into a bowl convenient for you, add sugar and vanillin to taste.

        Then pour in kefir, it should be at room temperature. Mix everything well with a whisk.

        Lastly, pour in the vegetable oil and add salt and sifted wheat flour.

        The finished waffle dough will have a slightly thicker consistency than sour cream.

        Let's start baking waffles, for this we will need an electric waffle iron. Plug it into a power outlet, heat it up, and grease the surface with vegetable oil. You only need to lubricate once.

        Place a tablespoon of prepared batter on the lower platform of the waffle iron. Close the lid.

        Bake the waffles until a beautiful golden brown crust forms.

        The finished waffle cake needs to be rolled into a tube or cone. There are special devices for this, which are always sold complete with the waffle iron.

        But you can do this with your hands, just be very careful, since the cakes are very hot. And be sure to do everything very quickly, while the cakes are hot; cooled cakes are very brittle.

        Recipe 8: dough for wafer rolls with sour cream

      • Margarine – 150 gr.
      • Eggs – 3 pcs.
      • Sugar – 1 glass.
      • Flour – 2 cups.
      • Sour cream – 1 glass.
      • Soda – 1 teaspoon.
      • Place all the margarine in a deep bowl and put it in the microwave. When there is a small child in the house and time is short, I advise you not to build water baths; you can simply melt the margarine in the “defrost” mode.

        Beat eggs and sugar with a mixer or whisk. Even a blender can cope with this task, I checked it personally.

        Test to see if the margarine is hot after melting in the microwave. It should be moderately warm. Add beaten eggs and sugar to the margarine.

        Add soda to sour cream and mix.

        Combine sour cream and margarine with eggs. Be sure to mix.

        Add flour to the dough and mix with a whisk until there are no lumps.

        Having already received real batter for waffles, we can breathe easy - half the work is done.

        Be sure to grease the surface of the electric waffle iron with butter. It is not necessary to do this before baking each waffle, but it is necessary the first time.

        Bake each waffle for two minutes. To do this, scoop the dough into a tablespoon and quickly pour it onto the bottom surface of the electric waffle iron. Cover with the top. There is no need to spread the dough over the surface; it will spread on its own when you press it down with the lid of the waffle iron.

        You should avoid placing too much batter on the frying surface because the excess will leak once covered.

        While still hot, the waffles need to be rolled into tubes.

        Recipe 9: waffle rolls with whipped cream

      • eggs - 5 pcs.
      • margarine (butter) - 200 g
      • sugar - 1 glass
      • flour - 1 cup
      • ready-made whipped cream
      • First mix eggs with sugar.

        Beat thoroughly with a mixer on turbo mode.

        Then add pre-melted margarine (or butter).

        Mix with a whisk.

        Mix the dough thoroughly again with a whisk.

        Properly prepared dough is very important in preparing crispy waffle rolls. It should be quite rare (such as 15% sour cream).

        After preheating the electric waffle iron, add 1 tablespoon of batter and smooth it over the surface of the waffle iron.

        Bake until golden brown.

        Roll the finished waffles into a tube.

        You can eat waffle rolls without any cream at all, or, as in our case, fill them with regular ready-made whipped cream. You can also make waffle rolls with condensed milk.

      • butter - 50 gr
      • wheat flour - 0.25 cups
      • egg - 1 pc.
      • milk - 2 tbsp.
      • sugar - 0.25 cups
      • Mix the egg with sugar. Beating is not necessary.

        Melt the butter or margarine, cool and add to the egg.

        Now it's the turn of the flour.

        Add milk, mix all ingredients and get waffle dough. Its consistency should be approximately the same as for pancakes.

        We heat the panel of the electric waffle iron and grease it with vegetable oil. This needs to be done 1 time. When further baking waffles, this is no longer necessary.

        To bake 1 waffle, you need to put 1.5-2 tablespoons of dough on the panel. If you put more, it will leak out. We try to put it in the center. When you close the waffle iron, the dough will distribute itself over the surface; there is no need to spread it.

        Fry for about 30 seconds. You can open the waffle iron slightly and look at the degree of frying. We adjust the degree ourselves - from light yellowness to brown.

        If we plan to make tubes from waffles, then our task is to quickly roll up the finished hot waffle. In just a few seconds the waffle will harden, and this will no longer be possible.

        We bake and twist all the tubes in this way. This amount of dough produces 7-8 tubes, depending on the size.

    Sour cream waffles are easy to prepare at home, even for those who rarely find themselves in the kitchen wearing a chef's hat and apron. The main conditions are to strictly follow the cooking instructions and choose quality products in the required quantities. For cooking, a waffle iron is used - an old, Soviet-style one or a new one - it doesn’t matter. Some recipes require the use of a conventional oven.

    Thin and crispy

    The finished dish is thin, crispy, and can be combined with any additives.

    Ingredients:

    • chicken egg - 3 pcs.;
    • granulated sugar - 180-190 g;
    • wheat flour - 150 g;
    • medium fat sour cream - 230-240 g;
    • cream margarine (you can use another one, but not for puff pastry) - 140-145 g;
    • baking soda - 2 g.

    How to cook:

    • Chop the margarine into small pieces, place in a glass container and place in a warm place - for example, near a boiling pan - until it becomes soft. Under no circumstances should it be melted or boiled over a fire;
    • add soda to sour cream at room temperature (you need to take it out of the refrigerator about an hour beforehand). There is no need to extinguish it with acid;
    • Break the eggs into a wide glass container and grind until white together with granulated sugar so that no grains of sand remain in the resulting liquid;
    • mix all three resulting masses;
    • Gradually add sifted flour in small portions. It is advisable to move the spoon from bottom to top, and not just in a circle;
    • Make sure that the liquid becomes homogeneous and has no lumps.

    There is no need to infuse the prepared dough; you can immediately proceed to the main thing - baking.

    Heat the waffle iron, add a teaspoon of the mixture and bake for 1-1.5 minutes.

    Place the finished products on plates lined with clean paper - this will keep them crispy.

    Soft waffles

    This dessert goes well with buttercream.

    What you will need:

    • flour - 210 g;
    • chicken eggs - 3 pcs.;
    • food baking powder - 15 g;
    • sour cream - 240 g;
    • freshly squeezed lemon juice - 10 ml;
    • vanilla powder - 2 g;
    • granulated sugar - 135 g;
    • sweet soy sauce - 20 ml. If this ingredient is unavailable, you can use a pinch of regular table salt.

    Cooking algorithm:


    • well, until foam forms, beat the eggs with granulated sugar in a wide and deep bowl;
    • gradually pour in sour cream and sauce in small portions or add salt;
    • beat vigorously with a whisk or fork until a homogeneous mixture is obtained;
    • add 105 g of flour and mix again;
    • pour baking powder into a spoon and quench it with juice and place everything in a bowl;
    • Now add the remaining flour in small portions and knead the dough, using a spoon vertically.

    Place a small amount of the mixture into a heated electric waffle iron and bake the waffles until golden brown. Finished products must be covered with a lid, otherwise they will dry out and become crispy on top rather than soft.

    Classic Viennese

    It is better to cook this dish in the oven and use silicone molds. A freshly prepared dessert will be crispy, but after half an hour it will become soft and airy.

    What is necessary:

    • potato or corn starch - 180 g;
    • eggs (large) - 4 pcs;
    • wheat flour - 190 g;
    • sour cream - 90 g;
    • powdered sugar - 110 g;
    • baking powder - 5 g;
    • vanilla essence or natural cinnamon (optional) - 0.5 g.

    Preparation:


    • sift flour and starch;
    • add baking powder and salt there;
    • separate the yolks from the whites;
    • beat the whites with a mixer until a thick elastic foam forms, place them in a cold place;
    • separately grind the yolks with sour cream, gradually adding powder to them until a foamy liquid forms;
    • without ceasing to stir, gradually add the flour component;
    • When the mass acquires a uniform color, carefully fold in the whipped whites.

    Distribute the dough into silicone molds and place in an electric or gas oven preheated to 190-200 °C for approximately 6 minutes. Baking time may vary depending on the condition and power of the oven, so you must constantly monitor the future delicacy, checking readiness with a toothpick or wooden skewer.

    Friable with butter

    Products according to this recipe turn out to be crumbly and tender, but at the same time not very thin.

    Required Products:

    • butter (if necessary, can be replaced with spread or margarine) - 240 g;
    • medium-sized eggs - 4 pcs.;
    • low-fat sour cream - 65-70 g;
    • wheat flour - 140 g;
    • powdered sugar - 140 g;
    • salt - 2 g;
    • baking soda - 1 g;
    • vanillin (for aroma) - one sachet.

    How to bake:


    • Cut the butter or spread into pieces, melt a little in a water bath, but do not boil;
    • add powder and vanillin and beat thoroughly with a mixer until you obtain a homogeneous liquid slurry;
    • pour in the yolks and process again with the mixer;
    • beat the whites separately, after washing and drying the whisk;
    • pour sour cream into the mixture, add soda and salt, then beat;
    • Without turning off the appliance, gradually add flour;
    • finally, add the protein and knead everything well.

    Wait for the electric waffle iron to fully heat up and start baking. Cream made from boiled condensed milk, whipped cream, or cottage cheese is ideal for these waffles.

    Often the products are wrapped in a tube and then filled with the desired filling using a culinary syringe or a plastic bag cut at the tip.

    Blueberry waffles

    This dessert is perfect for a summer breakfast, although frozen berries can also be used. The main thing is not to damage their structure during the work.

    What you will need:

    • butter - 90 g;
    • fat sour cream - 120 g;
    • wheat flour - 185 g;
    • fresh or defrosted blueberries - 130 g;
    • powdered sugar - 65 g (if the berry is sour, you can increase the amount);
    • baking powder - half a teaspoon;
    • cow's milk - 135 ml;
    • large egg - 1 piece;
    • table salt - a pinch.

    • Chop the butter and leave in a warm room until it becomes soft;
    • put sugar and egg into it, then beat thoroughly with a mixer or by hand with a whisk;

    For those who don't like sweets, this recipe is perfect.

    Required ingredients:


    • “Russian” cheese - 110 g;
    • flour - 240 g;
    • sunflower (or olive) oil - 70 ml;
    • medium fat sour cream - 280 g;
    • baking powder - a full teaspoon;
    • medium-sized eggs - 3 pcs.;
    • semolina - 75 g;
    • table salt - 1 g.

    Preparation:

    • put the sour cream out of the refrigerator for one hour so that it is not cold;
    • mix it with semolina and leave at room temperature again for the same period for swelling;
    • grate hard cheese on a fine grater;
    • beat the butter with the eggs until a fluffy mass forms;
    • add baking powder and salt;
    • Add the egg-butter mixture to a bowl with swollen semolina;
    • stir in grated cheese;
    • Gradually, in small portions, add flour and knead the dough.

    Preheat an electric waffle iron, place the required amount of dough on it and bake until done (two minutes). The waffles should be thick, so don’t skimp when pouring the batter.
