Zrazy are molded, laid out on a greased baking sheet and placed in the oven for half an hour. Then the sheet is removed, each cutlet is smeared with a teaspoon of mustard. Recipe for meat zrazy with egg:

I came to visit a friend, opened the refrigerator, and saw a couple of chicken eggs, minced meat and greens. To the question, “What are we going to cook?”, I received a logical answer – “I don’t know!” As a result, a wonderful dish was born - “Meat zrazy with egg”, the recipe for which I borrowed from the Internet a long time ago. First, take a little loaf of bread, that’s enough 3 slices. We break the semi-finished flour product into pieces, put it in a deep plate and fill it with 100 milliliters of whole pasteurized milk.
Let the bread absorb all the white liquid and soften, you won’t have to wait long for everything 2 – 3 minutes. During this time, use a knife to peel the onion and garlic, wash the vegetables under running water to remove any kind of contaminants, dry with paper kitchen towels, cut the onion into 6-8 small pieces and place the vegetables in a clean blender bowl. We pour or transfer the softened bread along with milk there.
Turn on the blender at the highest speed and grind the ingredients to a puree within 30 – 40 seconds.
Then put the required amount of minced meat “assorted” of pork and beef into a deep bowl.
Remove the knife from the blender bowl and use a tablespoon to transfer the crushed ingredients into a bowl with the minced meat.
Into the same container we beat 1 raw, unshelled chicken egg, add a couple of tablespoons of sifted wheat flour, a couple of pinches of ground black pepper, allspice, chopped bay leaf, hops - suneli and salt to taste.
Mix the ingredients of the minced meat with a tablespoon until smooth and begin preparing the filling.

Step 2: prepare the filling.


We clean boiled and cooled chicken eggs from their shells, rinse them under running water to remove any small fragments that might remain after cleaning, and dry them with paper kitchen towels. Cut each egg into 2 halves and place them in a clean and dry blender. We also rinse several stalks of green onions and a bunch of dill under cold water. Shake the greens over the sink, thus getting rid of excess liquid. We tear it into smaller pieces with our hands and send it to the eggs. Turn on the kitchen appliance at the highest speed and grind the filling ingredients for 30 – 40 seconds to a mushy consistency. Remove the knife from the blender bowl and leave the filling in it.

Step 3: form meat zrazy with egg.


Now we take 2 deep plates, pour ordinary running water into one, and pour into the second the amount of sifted wheat flour required for breading. Dip the palms of your hands into a plate of water. Using a tablespoon, scoop out a generous portion of minced meat and place it in your palm. Lightly press down the minced meat with your other hand to make a flat, thick pancake up to 1 centimeter.
We take a whole teaspoon of filling and place it in the middle of the meat cake.
We connect the edges of the minced meat so that we get an oval cutlet.
Afterwards, roll the semi-finished meat product in flour on all sides and place it on a cutting board, after sprinkling it with a small layer of flour.
In the same way, we form all the other zrazy until the filling is finished; if there is some minced meat left, it can be used to prepare regular cutlets.

Step 4: fry meat zrazy with egg.


Turn the stove on to medium level and place the frying pan on it with 2 – 3 tablespoons vegetable oil. When the fat warms up, very carefully lower the first portion into it at once and lightly press them with a kitchen spatula so that they take a flat shape up to a thickness of 1 – 1.5 centimeters. Fry them for 3 – 4 minutes until golden brown.
Then, using a kitchen spatula, turn the aromatic zrazy over to the other side and continue frying them some more. 3 – 4 minutes. Until they are completely covered with a beautiful ruddy, brown crust.
Then we transfer them to a deep plate, add oil to the frying pan and send the second portion into it immediately. In the same way, prepare all the remaining cutlets with filling and place them in a deep plate. After the last portion is fried at once, send all the meat cutlets back to the frying pan and pour into it 50 – 60 milliliters pure distilled water and immediately cover the container with a lid.
Let the zrazas steam for 2 minutes and put them back into a deep plate.
Then we take several fragrant cutlets and put them on a plate.

Step 5: serve meat zrazy with egg.


Meat zrazy with egg is served hot, at the rate of 1 serving - 2 cutlets.
The side dish for this delicacy can be absolutely anything, for example, pickled or fresh sliced ​​vegetables, boiled cereals, pasta, rice, baked vegetables, vegetable purees, salads, or whatever your heart desires. Enjoy! Bon appetit!

But depending on the mood, I can make meat zrazy with different fillings: mushrooms, cheese, add herbs, vegetables. How to cook meat zrazy with egg, recipe step by step

Let's start with minced meat. I already wrote once that I don’t buy ready-made semi-finished products. There are several reasons, one of them is that I want to see what it is made of, but the savings should be reasonable, and in this case it is better to overpay a little for the meat and be sure of its freshness and quality. The cost of even pork or beef bought at the market from farmers is not much different from the price of minced meat. According to my observations, meat zrazy turns out very juicy and tasty if you take pork with fat and add a little beef. Pork is also good. So, we take a piece of meat, grind it into minced meat in a meat grinder, followed by an onion and bread soaked in water. Break one egg, season the chopped meat with pepper and salt.

We divide the kneading process into two stages. At first, we use a spoon, mixing all the products. Then we scoop the minced meat into our palm and throw it back. We do this 10-15 times, beating quite hard so that all the ingredients stick together and stick together. Cover the dishes and leave for 15-20 minutes.

For the filling, hard boil two eggs. They cook for ten minutes from the start of boiling water, then immediately place them under cold water and cool. We clean and cut finely, as for salads. Cut green onions and other greens into small pieces. Mix with egg, salt and pepper. Well, now my signature forming method, which will help you make the meat slices even and neat. Cover the plate with plastic wrap or place a thin bag. Place a tablespoon of minced meat on the film and flatten it into a flat cake.

We lift the edges of the bag, so the edges of the flatbread will rise and join above the filling. Now we turn it over onto the palm of our hand, cover the open areas and holes with minced meat and transfer it from one palm to another two or three times. The minced meat may stick to your hands, I advise you to wet your palms with cold water. What happened is visible in the photo - an even, round bun with filling inside. You can flatten it, I leave the zrazy round.

To fry, pour oil into a frying pan and heat it up. To check the temperature, throw a piece of bread or onion into the oil. If it bubbles around the piece and foams a lot, turn down the heat a little and lay out the pieces. If there is no reaction, it means the oil is still cold, increase the heat. Place the meat zrazy at a short distance from one another, fry over moderate heat for about five minutes, until crispy.

Turn over with a spatula; the other side will fry for about the same amount of time. My zrazy are small, this time is enough for them to reach full readiness. If you are making large ones, then after frying, pour water into the pan to cover the bottom by 2 cm and simmer under the lid for 15-20 minutes.

Well, everything is ready. Of course, you need to take care of the side dish in advance or quickly make some kind of vegetable salad with herbs.

If you decide to make a sauce, then make it not very spicy; the meat zrazy with egg is already seasoned with pepper; excessive spiciness will overwhelm the taste of the meat and filling.

And the very tasty meat zrazy with egg and green onions in the middle? Believe me, this option turns out much more interesting and appetizing. The recipe for this dish is not at all complicated, so don’t worry about not being able to do it: everything is quite simple and relatively quick.

Ingredients:

  • 0.5 kg minced meat;

Combine eggs and onion, add salt and ground black pepper to taste, mix.

Divide the minced meat into 6 -7 approximately equal parts. If you want smaller zrazy, divide into 8 - 10 parts. We pour each part into a cake, and press a small oval depression in the center with our hand. Place 1 full tablespoon of filling into the cavity and press down lightly.

Carefully mold the zrazy into the shape of cutlets - they should be smooth, the minced meat should be securely closed.

Roll the zrazy in breadcrumbs.

Heat vegetable oil in a frying pan and lay out the zrazy. We place the zrazy freely so that they do not touch each other - otherwise they will be stewed and not fried. Fry the meat zrazy with the egg and onion over high heat for 3-4 minutes until golden brown. Then carefully turn it over and fry the other side in the same way.

Grease a baking dish with vegetable oil and lay out the zrazy.

Cover the pan with foil (or, if available, a lid) and place in an oven preheated to 200 degrees.

Bake meat zrazy with egg in the oven for 20 minutes.
